1pkt Otway Pasta Company fresh pasta – 400g (I use Torchio with this recipe)
100g Pauls Basil Pesto
50g Bulla Cream
200g Smoked Chicken Breast (thinly sliced)
100g Mi-lel Grated Parmesan
Put a large pot of water on to boil.
In a saucepan over medium heat add smoked chicken breast and gently heat through for 2-3 mins. Add pesto and cream and turn heat down to low.
Once water is boiling cook pasta as per directions. Add the drained pasta to the pesto, cream and chicken mix. Add 1/3 cup of the pasta water if required. Gently toss together. Turn off the heat, add most of the parmesan (save a little to garnish) and toss through gently until combined.
