Crispy Skin Salmon with Otway Chef Cashew Dukkah

Seafood has always been a favourite to many of us. So it is to our Otway Chef and his wife. This Crispy Skin Salmon creation is invented by the local Otway Chef, using his Otway Chef Cashew Dukkah rub. Get your Otway Chef Dukkah range at Tastes of the Region and give this recipe a try!

Simply sear the salmon in a pan, skin down with olive oil until slightly browned. Turn over and cook for a further minute or two. Place the salmon on a tray and press a generous amount of dukkah into the skin. Pop into the oven at 200C for 5-6 minutes. Serve with your favourite side and enjoy!
